This weekend I decided to embrace silly season full on with some festive cooking; starting with these ginger spiced cookies.
I’m not a huge lover of cookies if truth be told, but my husband most definitely is. So much so that a day after making a batch, there are none left. Looks like I’m not the only greedy around these parts!
Ingredients
2 cups self-raising flour
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground nutmeg
Pinch of salt
1 egg
3/4 cup vegetable oil
1/4 cup honey
1 cup packed brown sugar
1/3 cup granulated sugar (for coating)
Preparation
Preheat oven to 170c. Lightly spray two baking sheets with oil.
In a bowl, mix flour with cinnamon, ginger, nutmeg and salt, using a fork.
In a different (larger) bowl, beat egg, then add oil and honey, beat. Using a wooden spoon beat in brown sugar until evenly mixed. Gradually stir in flour mixture until well mixed.
Place granulated sugar in a small bowl. Pinch off about one tbsp dough and roll into a ball. Roll ball in granulated sugar until evenly coated. Place on a baking sheet two inches apart.
Bake for about 12 minutes until cookies begin to crack and set around the edges. Remove sheets from oven and let cool for at least ten minutes.
